1. Vanilla Coconut Berry

Ingredients:

  • ⅓ cup low fat plain Greek yogurt
  • ⅓ cup coconut milk
  • 1 tsp raw honey (for the bottom half)
  • 2 tsp raw honey (for the upper half)
  • 1/2 tsp vanilla extract
  • 2 cups frozen blueberries
  • ¼ cup water

Step 1: Make the Coconut Yogurt Bottom Half

In a medium-sized bowl, pour the coconut milk, yogurt, vanilla extract, and 1 tsp of honey. Mix everything together until smooth. The yogurt base for this recipe is rich in protein, which can help you with weight management.

Step 2: Pour and Freeze

Pour the first mixture halfway into your popsicle molds. Make sure to leave some room for the other mixture. Then leave it in the freezer for at least 2 hours.

Step 3: Make the Blueberry Mixture

In a blender, pour the water, blueberries, and 2 tsp of honey. Blend everything until you have a smooth mixture.

Step 4: Pour into the Mold

Take out the popsicle molds with the coconut yogurt from the freezer, and then pour in the blueberry mixture until the molds are full. Put the popsicles sticks in the molds, and return them to the freezer. This time, leave them in the fridge for 4 hours to let everything set.

 

2. Summer Fruit Popsicle

Ingredients:

  • 1 small mango
  • 1 small kiwi
  • One quarter cup raspberries
  • ¼ cup blueberries
  • ¼ cup lime juice
  • 2 Tbsp. raw honey
  • ½ cup water

Directions:

Step 1: Slice the Fruits

Wash all of the fruits, and then cut them into thin slices. Peel the mango and kiwi fruit before cutting them. Make sure the slices are thin enough to fit in your popsicle mold.

Step 3: Extract the Lime Juice

Wash the lime and then cut it in half. Press it against a citrus juicer and try to get at least ¼ cup of lime juice. Set it aside.

Step 4: Heat Up the Honey

In a small pan, pour the honey and water and cook it on medium heat. Stir the mixture while it’s cooking. Do this for 5 minutes until they’re both well-blended. Then take it off the heat and let it cool at room temperature.

Step 5: Mix the Honey and Lime

Take the lime juice and pour it into the mix. Stir until everything is mixed well.

Step 6: Place the Fruits in the Molds

Take the slices of fruit and place them inside the popsicle mold. To make this easier, lay down the mold and then arrange the fruit slices.

Step 7: Pour Honey and Lime Mixture

Pour the honey and lime mixture into the popsicle mold until it’s filled up. Lift up the mold slowly to avoid changing the arrangement of the fruits. Then, finish it off by adding a popsicle stick.

Step 8: Freeze and Enjoy

Leave the molds in the freezer for at least 4 hours. After four hours have passed,  squeeze the molds to see if your popsicles are ready. If they are rock solid, they are ready to be served!

 

These skinny fruit popsicles are great snacks that will satisfy your sweet tooth without making you worry about gaining extra weight or raising your blood sugar level. You can also create your own popsicle flavor by replacing the coconut milk and lime juice with other flavors you fancy. These recipes are quite versatile, so don’t hesitate to get creative with them.
